Evaluating Behavioral Strategies to Incentivize Healthy Choices in a Food Pantry Setting?

This research acts as part of an exciting new project in the Food and Resource Economics Department, focusing on two key elements: 1) understanding how individuals use and make choices in a food pantry setting and 2) identifying unobtrusive behavioral nudges that may lead individuals to choose healthier food alternatives in the food pantry. This project is designed and will be carried out at the UF Hitchcock Field & Fork Pantry. The work will be conducted as part of a team including faculty across IFAS in Food and Resource Economics (FRE), Food Science and Human Nutrition (FSHN), and Family, Youth and Community Sciences (FYCS) with support for the work from the Dean of Students Office (DSO). Ultimately, there is potential to make an immediate contribution to the growing literature on food insecurity and food pantries as well as the potential to inform operations of the Field & Fork Pantry here on campus.
